Eleuteria is perfect with all meat dishes, game meats and with mature cheeses of intense flavor. Unusual, but very pleasant is the combination with swordfish ‘alla ghiotta’, tuna with sesame, roast octopus. It can also be tasted with dark chocolate and dried figs. We recommend a serving temperature of 18 ºC. When pairing with raw fish we suggest a slightly lower temperature.
Esmén Tetra is excellent in combination with all dishes based on meat, salami and seasoned cheeses. Unusual but very interesting, is the combination with oysters, sashimi, fried fish, and king krab ‘alla catalana’, octopus. Even excellent with first courses based on mushrooms, ‘risotto’, ‘ravioli’. We recommend you taste it at a temperature of 16-18 C. When paired with raw fish we suggest a serving temperature of 15 ºC.
